Nolan's Irish Poached Salmon

  1. 4x200g fillet of Irish salmon
  2. 50g onions
  3. 50g carrots
  4. 4 bay leaves
  5. 10g parsley
  6. 5/6 peppercorns
  7. 100ml vinegar
  8. pinch of salt
Cooking Time: 15 mins
Serves: 4
  1. Prepare the  Quality Irish salmon and cut into darns
  2. Half fill a medium size pot with water
  3. Add in slice onion and carrots  , fresh herbs and bay leaf
  4. Add in  black pepper corns and 50 ml of vinegar
  5. Season with sea salt
  6. Bring the liquid to the boil and turn down the heat to simmer
  7. Place the darns of salmon in the poaching liquid
  8. Cook by gently simmering the salmon for twelve minutes
  9. When the salmon is cooked remove from the pot and serve 

Tips for poaching salmon
Bring the cooking liquid to the boil and lower the heat. 
By gently poaching the salmon with hold the structure of the salmon. 
Serve with new potatoes and hollandaise sauce.
