Nolan’s Fresh Irish Grilled Salmon

  1. 4x200g fillet of Irish Salmon
  2. 2 lemons
  3. 200g butter
  4. 5g herbs (dill, parsley, chives)
  5. 100ml oil
  6. tt salt
  7. tt pepper (*tt = to taste)
Cooking Time: 15 mins
Serves: 4
  1. Prepare the  Quality Irish salmon and cut into darns
  2. Brush with oil
  3. Season with cracked salt and pepper
  4. Heat grill pan  to a very hot temperature
  5. Place the seasoned darns of salmon flesh side down on the grilling pan
  6. Cook to mark for 3-4 minutes and turn  to achieve a cross design
  7. Cook for another 3-4 minutes then turn over on to the skin side
  8. Cook right through so the salmon is cooked but still moist
  9. Serve with ½ a lemon and a lemon herb butter 

Lemon Herb Butter
Grate rind of one lemon. Chopped fresh herbs (chive parsley dill). Add to 160g butter and mix well. Season and add squeeze of lemon. Mix very well roll in greaseproof paper and store in fridge. 

Tips for Grilling Salmon 
Only move the salmon once to achieve the best colour for grilling and marking the grill design on to the salmon flesh. 
Make a pig tail ½ lemon. 
Serve with a green summer salad and new potatoes with spring onion.
